Eccles Cakes

Eccles Cakes

I’ve just rediscovered Eccles Cakes. I was wandering round Tescos doing the weekly shop, and there they were on the shelf – calling out to me.

As everyone knows, an Eccles cake is a small, round cake filled with currants and made from flaky pastry with butter and can sometimes be topped with demerara sugar. As everybody also knows, Eccles cakes are sometimes called “Squashed Fly Cakes” in the same way that fruit shortcake biscuits are known as “Squashed Fly Biscuits”.

For some reason, Eccles Cakes always remind me of my Grandma.
